Fortunately, if you start small, it doesn't have to be as expensive as you might think. First things first, though. Since everything would be based on CV signals, you'd also need a compatible keyboard, and who's to say you won't be wanting to control your Eurorack system from your DAW? Clearly, there's plenty to consider, but wait.
